Moroccan spiced vegetable tagine

This is a really popular dish in the restaurants and can be adapted to whatever vegetables are in season. Right now I have a glut of pumpkins, marrows and chillies to use up. I love the hit of sweetness from the fruit balanced with the blend of spices. This tagine will benefit from being made in advance and allowing the flavours to melt together.

Instructions

Step 1 Sweat the onion and garlic in the olive oil until soft.

Step 2 Add the other vegetables and sweat a little more.

Step 3 Add the remainder of the ingredients and bring to a simmer.

Step 4 Allow to cook out gently for approximately one hour.

Step 5 Taste as you go and add more spice to your liking.

Step 6 Serve with cous cous and mint yoghurt for a warming seasonal dinner.
